Blueberry Pie Frittata (i.e. Blueberry Crumble):

  • Filling:
  • 2 Cups of blueberries
  • Juice from 1 lemon
  • Zest from 1 lemon
  • ¼ teaspoon vanilla extract
  • 1/8 cup flour
  • Crumble:
  • 1/3 cup flour
  • 1/3 cup oats
  • 1/3 cup brown sugar
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • 4 tablespoons cold butter diced


  1. Spread blueberries out in a pie dish.
  2. Toss blueberries with lemon zest, lemon juice, vanilla, and flour.
  3. In a clean bowl make crumble by combining flour, brown sugar, oats, cinnamon, and salt.
  4. Mix in cold, cubed butter using fingers until butter is well blended and mixture is crumbly.
  5. Top blueberries with crumble, spreading it out evenly.
  6. Bake in 350 F oven for 30-40 minutes.
  7. The crumble is done when the fruit is bubbling and the crumble is golden brown.
  8. Optional (but highly recommended) step: Enjoy a glass of wine while the crumble bakes!
  9. Once the crumble is done let it cool for 5-10 minutes, mainly to let it stop bubbling.
  10. Enjoy with delicious vanilla bean ice cream!
