I have always loved cheese sauce. I can’t remember a time before I loved it and I have no plans for a time after I love it to exist.

When I was little I would put it on anything I could. It had magic properties that could turn corn chips into nachos and broccoli into heaven.

Today I’m sharing with you one of my favorite cheese sauce recipes, Broccoli with Cheddar Beer Sauce! The broccoli is steamed until fork tender and the sauce is creamy, dreamy sharp cheddar-y goodness. As an added bonus the beer makes the sauce rich and tangy. (Note: If you’re cooking for kids just substitute more milk for the beer, it will still taste yummy)

Seriously, what better way to eat your broccoli then covered in cheese and beer anyway? Yummy! 🙂

Broccoli with Cheddar Beer Sauce

Fork-tender steamed broccoli covered in creamy white cheddar beer sauce
Servings 4

Ingredients

  • 1 ½ - 2 lb broccoli crowns
  • 1 ounces by weight sharp cheddar cheese freshly shredded
  • 3 ounces beer lager or ale
  • ½ cup milk
  • 2 tablespoons butter
  • ¼ cup flour

Instructions

  1. Chop broccoli into florets. Steam for 10-15 minutes until stems are fork-able but still firm.
  2. Melt butter in sauce pan over low heat. Whisk in flour. Slowly pour in milk and beer, whisking constantly until no lumps remain, about 2-3 minutes. Add cheese a little at a time, whisking constantly, and making sure cheese is completely melted before adding more cheese. Continue until all cheese has been incorporated. Once all cheese has been added, whisk until cheese sauce is thick and smooth, about 3-5 minutes.
  3. Pour cheese sauce over broccoli and enjoy!

    can I make this sauce a couple o hours befoe dinner then just heat it up

      Hi Teresa! Thanks for your question and your interest in the broccoli soup recipe! Yes, you can make the soup ahead of time. Just follow steps 1-4, then when you’re ready for dinner reheat the soup and finish off with steps 5-6. Good luck and happy dining 🙂

    Sounds delicious but recipe list of ingredients state 1 ounce sharp cheddar. But then instructions say add cheese 1 ounce at a time. Sorry but I’m a little confused by this. Would you please let me know exactly how much cheese. Thanks in advance.

      Hi Carolyn! Thanks for asking about the cheese. The recipe does require only one ounce total of cheese. I meant to write that you should add a little at a time (not one ounce at a time). I’ve changed the wording in the recipe, so I hope it’s clearer now. Definitely let me know if you have any other question!
